Instead of filling the fermentation tank with pulped parchment, then covering with water the standard way, Catalyst adds cascara from previously dried natural lots. The fruity cascara infuses extra flavor into the fermenting coffee. Once complete, the parchment coffee is funneled into the washing channels where local filtered river water pours over them and laborers scrub them with wooden rakes until the water runs clear. The parchment then drip dries for 6-10 hrs and then is dried to its final moisture level under the open sun.
