Amatenango de la Frontera is a region in Mexico just steps away from the Guatemalan border. In fact, these coffees are very reminiscent of classic Huehuetenango coffees, as this famous growing region is so close by.

This coffee has been Mountain Water Processed. In this method the coffee is exposed to a water solution which extracts the caffeine. The water is then run through a special filter that captures the flavor molecules. From there the water, without the caffeine, is reintroduced to the green coffee, so that any flavor or other compounds other than the caffeine can be reintroduced to the beans. It’s then dried again and prepared for export.
