Sicobi was organized by a non governmental organization called GAIA (Grupo Autónomo para la Sicobi’s Guinashi Lot is form by 71 small producers of the San Juan Ozolotepec, San Francisco Ozolotepec, San José Ozolotepec, and San Felipe Lachillo communities. All these communities are located within the Southern Highlands of the state of Oaxaca.
While its coffees are 100% washed process, they profile similar to a natural coffee. That happens because of the natural conditions;, particularly the very dry landscape that creates a unique micro-climate. Additionally, Sicobi’s growers ferment their coffee in wood tanks, which helps give the coffee the profile of a natural.
